I created a separate “Blog” page and under Settings>Reading set it as the Posts Page. Once I set this as a post page the layout changes to a format I do not want. I do not see a way to control the layout once set as a post page it disappears and removes the option for full page layout. My site is not yet live, so please use this picture as reference.

The areas highlighted in red appear when I set the page as my posts page.
On another note, when setting a static page for posts, how do I set the root page [HOME] as my front page, as it doesn’t show in the pages or the drop down
I found the answer to my own question. I see when you follow the instructions below, posts will go to the identified blog page WITHOUT having to set it in Setting>Reading – Posts Page
