Hello,
1. on my page i have the problem, that the first letter of the header title isn’t editable.

The “e” is always in the default theme color. I used all option of the theme, but this one letter won’t change.
2. where do i change the colors of the links on the page? i can’t find an option for this, too.

Do you mean blog page? Can you show us the blog page directly? Did you try to upload a featured image on the blog page to see if it replaces the background?

Kindly use contact form 7. And while using contact form 7 kindly visit Appearance>Theme Options>Custom CSS and paste this there:
.wpcf7 {color:#000000;}
