Hello there at Support.
I trust all is well.
I do not appear to have a manual / instructions for this theme in particular to using the courses templates. When I edit the existing, I keep on getting the Mathematics header.

Ans: You can use templates for single teachers, courses, etc.
Kindly go to pages >> particular >> edit with elementor >> and follow these steps.
1. Click on Add templates.
2. click on my templates and select template from the below list.See screenshots:
