hide page in header

Hi,
I am looking for an easy way to exclude one page out of the header menue.
I use http://sktthemesdemo.net/yoga/ sktpro theme. There is for example the “welcome” page exluded in the header. I did not find a working plugin.

I also want to adapt the name “Startseite” in my HP http://www.aikido-steyr.at/wordpress/ to another name e.g. “Home”, how can I do this?
